Graduate Student Dining Extravaganza
For dinner last night we had calf’s liver with onions, lima beans, and salad. The lima beans had been soaked overnight and cooked with a piece of bacon in a crock pot all day long. The day before I had purchased calf’s liver, although I considered buying the lower cost beef liver instead. I’m glad I paid more to get a tenderer, tasteful cut of meat. The onion had been in my refrigerator for a while and I used it just in time. The salad was from a prepackaged Del Monte bag, another indulgence but so much more convenient than washing, chopping, and grating each individual ingredient. I had apple juice with dinner, because the Vitamin C would help my body absorb more iron from the liver. No dessert – we just don’t bother with sweets at my house. This healthy, well rounded, meal cost less than $3.50 per person, and took only minutes to prepare.
